Lemon Shortbread Cookies

The Perfect Summer Treat

1 ½ cups all-purpose flour

¼ teaspoon baking powder

¼ teaspoon salt

1/8 teaspoon baking soda

1 cup granulated sugar

½ cup butter, softened

1 egg

1 teaspoon vanilla extract

1 lemon, zested and juiced

  1. In a bowl, mix together flour, baking powder, salt, and baking soda.

  2. In a separate bowl, use a hand mixer to beat together the sugar and butter and then add in the egg, vanilla extract, lemon zest, and lemon juice until smooth. Be sure everything is combined.

  3. Add the flour mixture to the wet ingredients and mix.

  4. Cover the bowl and refrigerate the dough for one hour.

  5. Preheat the oven to 350 degrees.

  6. Line a baking sheet with parchment paper.

  7. Use a small scooper, or spoon, and shape the dough into 1 to 2 inch rounds.

  8. Bake in the preheated oven for 12-15 minutes.

  9. Remove from the oven. Let cool on the baking sheet before transferring to a wire rack.
